Two FBGs spaced along the same fiber form a cavity between them, similar to a conventional Fabry-Perot interferometer's mirrors. Small phase shifts inside that cavity — from temperature, strain, or acoustic waves — become detectable through changes in the cavity's transmission spectrum.
